Peruvian cuisine that is custom-made for your enjoyment

Arai Shoten, where you can taste authentic Peruvian cuisine, is particular about providing food tailored to its customers: we hear that most of their dishes are custom-made. The staff inquire about the customer's budget and wishes by one day prior, and then they procure ingredients at the market. A particularly popular item from the menu is ceviche. This is a dish in which seafood is marinated with Peruvian chili peppers, coriander, and lemon. It is eaten by over 90% of customers. However, since it is custom-made, this dish is provided to each table differently. For instance, the restaurant may focus on volume for customers who wish for their appetite to be satiated, and may provide the dish as a snack to people who wish to enjoy it as something to accompany alcohol. There are some ingredients that cannot be procured in Japan due to the climate. However, Arai Shoten uses chili peppers from Peru in order to provide a definitively Peruvian experience. There are over 250 varieties of chili peppers in Peru (just from what can be counted), and different types are used for different dishes.
